1/2 cup cashews, soaked for 10-60 minutes
3/4 cup hemp seeds
1/4 cup nutritional yeast
1 tsp lemon zest
1 tbsp apple cider vinegar
Juice 1 lemon (approx. 3 tbsp)
1 tsp sea salt
1/2 – 3/4 cup almond milk (or any unsweetened plant based milk)
Linguine (or your choice of pasta)
Fresh herbs (Parsley, Dill, Basil)
Fresh rocket, black pepper and hemp parmesan to serve)
Place all ingredients into a high speed blender (start with 1.2 cup plant milk), blend until smooth adding more milk until smooth.
Cook pasta to packet instructions.
Drizzle a little hemp oil over the pasta. Pour over sauce and mix well. Add in chopped fresh herbs.
Serve with some cracked black pepper, squeeze of lemon, fresh rocket and hemp Parmesan.
Note; You can add other veggies like mushrooms, kale, zucchini, spinach, broccoli…
